#1 favorite protein ball recipe that the girls at the gym absolutely love! And rightfully so because who doesn’t love the flavor combinations of cinnamon and sugar?!

Cinnamon and sugar are what makes a snickerdoodle, but that doesn’t mean we have to stick to the traditional unhealthy, sugar filled dessert.

Because these snickerdoodle protein balls are good for you! Not only are they made with natural sweeteners like pure maple syrup and coated with coconut sugar but they are also gluten-free, dairy free and filled with lofts of healthy fats, flavor and protein.

Because these snickerdoodle protein balls are good for you! Not only are they made with natural sweeteners like pure maple syrup and coated with coconut sugar but they are also gluten-free, dairy free and filled with lofts of healthy fats, flavor and protein.

HOW TO MAKE SNICKERDOODLE PROTEIN BALLS

Let me give you the easy answer. Add all of the ingredients to the food processor and blend until the mixture is thick and creamy. Roll into balls and that’s it!

Main reason why I love these protein balls so much is because it doesn’t require baking, using only one kitchen equipment and takes less than 10 minutes to prepare.

WHEN TO EAT

  • Pre | Post workout - Need a quick bite before or after a workout to tie you over? Well, these protein balls are perfect in a pinch. Packed with protein and complex carbs to drive better performance at the gym!

  • Afternoon delight - If I am needing a snack or feel sluggish around 3PM, 1-2 of these protein balls will push me through with energy before dinner time.

  • Dessert alternative - Sometimes I will have a sweet tooth after dinner and these balls come in clutch!

Satisfy your sweet tooth with snickerdoodle protein balls - A no-bake, healthy treat that will keep you full!

Servings: 40 balls | Prep: 5 MIN | Cook time: NA

Ingredients

  • 3 cups oats (or oat flour)

  • 1 cup vanilla protein powder

  • ½ cup pure maple syrup

  • 1 ½ cup nut butter

  • ½ cup coconut oil

  • 2 Tbsp ground cinnamon

  • 1 tsp vanilla extract

  • ½ tsp sea salt

  • Cinnamon sugar coating (optional)

  • ¼ cup coconut sugar

  • 1 tsp ground cinnamon

Instructions

  1. To a food processor, (if not using oat flour), add oats to the processor and blend on high until oats have turned into oat flour. Add all of the ingredients, except cinnamon sugar coating, and blend on high until completely incorporated.

  2. If its too dry, add more honey or water and if it’s too wet, add 1 tbsp increments of oat flour.

  3. Using a tablespoon or cookie scooper, form into balls and place on a plate.

  4. If making the cinnamon sugar coating, add both ingredients in a small bowl and toss until incorporated. Add 3-4 balls in the cinnamon sugar mix and roll each ball around until fully coated.

  5. Store in an airtight container for up to one week or in the freezer for up to a month.

This fall inspired fig, vanilla and orange energy balls are a fresh flavor twist on the classic fig newton bar! 

Classic fig newton inspired energy balls were developed for some friends that are hiking the Grand Canyon rim to rim. 

Key points that had to be achieved for this recipe: 

1| to provide energy

2| clean carbohydrate source

3| fig newton-like flavor that tastes good!

18-24 balls | Prep Time: 10 Min | Cook time: N/A

Ingredients

  • 1 cup dried figs

  • ½ cup medjool dates

  • ½ cup pecans

  • ½ cup almonds

  • ½ cup walnuts

  • 1 tsp vanilla extract

  • ¼ cup ground cinnamon

  • Zest of orange

  • Splash or two of orange juice

Directions

  1. Place all ingredients in a food processor and pulse on high to combine. You may need to stop in between to scrape down the sides of the processor with a rubber spatula. 

  2. Blend and pulse for about 2-3 minutes, until the mixture starts to clump. Depending on how fresh your dates or figs are, you may need to add 1 Tbsp increments of water to help break down the mixture. 

  3. Using a cookie scooper or 1 Tbsp measuring spoon, scoop mixture out and roll into balls. Store in an airtight container in the fridge for up to two weeks. Can store in the freezer for up to 3 months.

Apple Butter

So before the fall season comes to an end, it’s time to take all the apples from orchard picking or local farmer’s market visits to make a big batch of homemade apple butter!

For this recipe, I visited Mercier Orchards in Blue Ridge, Georgia and chose a combination of Crimson Crisp and Pink Lady for this recipe. If you don’t have an orchard to visit or not sure what type of apple works well for apple butter, you want to look for something sweet, not tart like: gala, jonagold, Mcintosh, honeycrisp, fuji or evercrisp.

If you can’t already tell by the amount of apple recipes on the blog or through my social media, I am mildly obsessed with apples! There is nothing like biting into a honeycrisp after a workout or eating homemade chicken salad and getting a sweet apple crunch in every bite!

If you are wanting naturally sweet apple butter, then your best option is to choose these apple options within season as they are pretty sweet on their own and pack a major flavor! But in this recipe, I have added a natural sweetener like pure maple syrup in case you would like a tad bit more sweetness. 

I love spreading my apple butter on homemade sourdough bread, cornbread muffins, waffles, pancakes, or even meats like pork chops. You can add it to your yogurt, kefir, smoothie, oatmeal - just about anything and everything! 

I’m all about efficiency so I made this recipe using an Instant Pot. But if you don’t have an Instant Pot, crockpot or stove top will do just fine! You just want to make sure that the apples cook down enough until most of the liquid has evaporated. The process of cooking past the apple sauce stage, creates the smooth jam or butter like consistency, rather than applesauce.

Get all the fall feels with this homemade Instant Pot Apple Butter Recipe! 

Cook Time: 1.5-2 hrs | Prep Time: 10 min | Serving: 4 pints apple butter

Ingredients

  • 4.5 - 5 lb apples, cored and diced (not peeled!)

  • 1 Tbsp apple pie seasoning

  • 1-2 tsp ground cinnamon

  • ¼ cup pure maple syrup (depending on sweetness level)

  • Juice of 1 lemon

  • 1 tsp vanilla extract

  • ½ cup filtered water

Directions

  1. In a large bowl, place sliced and cored apples, seasonings, sweetener, lemon juice, vanilla extract and water and stir until well combined. 

  2. Transfer to your Instant Pot and secure the lid, seal the valve. Cook for 20 minutes on high pressure, then allow a full natural release. Remove the lid. 

  3. Using an immersion blender (or transfer batches in a regular blender), blend the contents until smooth. Taste test for desired sweetness/tart level. (i.e. want more tartness, add 1 tsp increments lemon juice, sweetness - 1 Tbsp increments of sweetener, spice - 1 tsp increments seasonings). Add the contents back into Instant Pot and press Saute. Allow to cook for 30-60 minutes while stirring frequently until the apple butter has thickened and darkened to desired consistency. 

  4. Press Cancel on the Instant Pot, then allow the apple butter to cool completely before transferring to large mason jars. Store in the refrigerator for up to 3 weeks. Freeze for up to 6 months. (Make sure you sharpie today’s date on the jar!)

We are nearing the end of our blood sugar series this week and I just had to save the best for last!

You heard it right, the traditional adrenal cocktail version that is made with simple ingredients (fresh fruit juice, coconut milk/cream, hydrolyzed collagen powder, and sea salt) has now been transformed into a warm and comforting fall drink. How? Let’s break it down!

The time is for the adrenal cocktail - fall version! You heard it right, the traditional adrenal cocktail version that is made with simple ingredients (fresh fruit juice, coconut milk/cream, hydrolyzed collagen powder, and sea salt) has now been transformed into a warm and comforting fall drink. How? Let’s break it down!

Organic Apple Juice - Has a notable amount of vitamin C, a key component of the body’s immune system and is needed when your adrenal glands are producing cortisol during stressful situations. Bonus* Apples contain an adequate amount of fiber and malic acid which may improve the digestive rate and can support liver function. 

Coconut Cream/Milk - Coconut milk has stable saturated fatty acids that help stabilize blood sugar levels and provides your body with energy. Depending on your preference in texture you can use either unsweetened coconut milk or cream. Personally, I think the cream is better and provides that “latte” texture to the drink! 

Hydrolyzed Collagen Powder - Collagen acts as a blood sugar regulator and provides essential amino acids to support and build a resilient gut and boost cortisol production. 
Cinnamon - Is that special spice that helps to naturally balance blood sugar, don’t skimp on it! 

Sea Salt or pink Himalayan sea salt - contain essential electrolytes and minerals like potassium, sodium, and magnesium that are key for energy production, blood pressure, and adrenal function. 

All of these power forces create a hot apple cider meets chai latte taste. It’s just so hard to put into words how amazing this drink tastes!

  • 4-8 oz 100% apple juice

  • 2-4 Tbsp coconut milk or cream

  • 1 scoop of collagen

  • ½ - 1 tsp cinnamon

  • Generous pinch of sea salt

  • Cinnamon sticks

Directions

  1. In a small saucepan, add a cinnamon stick and apple juice and cook on medium-high heat until slightly boiling and fragrant, about 5-10 min. Take off heat.

  2. In a milk frother, blender or a glass using a handheld frother - add coconut milk or cream, collagen, cinnamon, and sea salt and blend until smooth and creamy. 

  3. Transfer hot apple cider to a glass and pour cream over. Stir to combine and enjoy!
