Mint Matcha Smoothie

Mint Matcha Smoothie or what some people like to call, the Shamrock Shake! It’s a creamy, refreshing smoothie you can have for breakfast, pre/post-workout shake, or as a dessert! This smoothie is plant-based, naturally sweetened with bananas, and made with only 6-ingredients!

If you love all things mint, then you will love this smoothie. This recipe uses fresh mint and/or peppermint extract depending on your mint preference. My favorite addition of mint flavor is combining fresh mint leaves and CBD peppermint oil drops - so tasty!

What really elevates that fresh minty flavor is using matcha powder. Matcha comes from the same plant as green tea but since it is made from the entire leaf, it packs in a more concentrated amount of antioxidants and beneficial plant compounds. And since matcha is naturally lower in caffeine than regular coffee, this is a great alternative if you are wanting to cut back on coffee or incorporate it into your morning routine.

Even though this shake is considered a healthier version to the traditional “Shamrock Shake” feel free to make this when it’s not St. Patty’s Day! Now that you have the flavor combination down, feel free to change up the recipe. For example, add the optional greens powder/frozen cauliflower chunks if you know hitting your veggie goal is not in the cards that day.

Ingredients

  • 1/2 cup frozen banana

  • 1 cup unsweetened plant-based milk (I used my homemade cashew milk blend)

  • 1 heaping handful of fresh greens

  • 1 scoop vanilla protein powder

  • 1 scoop green superfood powder (optional)

  • Small handful of fresh mint leaves or 1-2 tsp peppermint extract

  • 2 tsp matcha powder

Toppings

  • cacao nibs, fresh mint, and yogurt

Directions 

  1. Add all ingredients to a blender and blend until smooth and creamy. Feel free to add more ingredients depending on preference. For example, add more bananas or another sweetener for a sweeter smoothie. 

  2. Nutrition Booster tip: instead of using ice cubes as a thickener, use frozen cauliflower or zucchini. Can’t taste it I promise!

I have found a way where you can relive these amazing childhood Christmas moments without crashing from a sugar rush or hurting from tummy woes!

These roll ups are reminiscent of fried cheesecake sans refined sugar, traditional flour, rancid oils, and dairy - all with a seasonal twist! Made with only five natural ingredients, using avocado oil spray instead of deep-frying, and using healthier sugar-laden swaps, not only is this a healthy treat, but it shows you how easy it is to make healthy swaps when it comes to desserts!

Now, these are peppermint mocha themed using peppermint extract, cacao powder, and instant coffee as the main ingredients but if you would like to switch out the flavor profile, feel free! For example, if you are caffeine sensitive, omit instant coffee.

Ingredients 

To make one roll up

  • 1 cassava flour tortilla (or allergy/sensitivity tortilla of choice)

  • 2 Tbsp Lactose-Free Plain Yogurt 

  • 1 tsp pure maple syrup

  • 1 tsp cacao powder

  • ¼ tsp instant coffee

  • A drop of organic peppermint extract

  • Avocado oil spray

Cacao Sugar Mixture

  • Cacao powder

  • Organic Cane Sugar (or maple/coconut sugar if Paleo)

Toppings

  • ¼ cup dark chocolate chips

  • 1 tsp coconut oil

  • Vegan white chocolate bar (omit if Paleo)

  • Organic Candy cane (omit if Paleo)

  • Fresh mint leaves

Directions

  1. In a small bowl, mix together yogurt, syrup, cacao powder, coffee, and peppermint extract until fully incorporated. 

  2. Place the filling mixture in the center of a tortilla and spread crosswise to form a long line of filling. For each roll-up, roll the side closest to you up over filling. 

  3. In a skillet, heat avocado oil to medium-high heat. Place roll ups in hot oil and fry on one side for 30-60 seconds. Turn roll ups until all sides are golden brown. Remove from the skillet and immediately sprinkle with the cacao-sugar mixture. 

  4. Set on a plate. Continue doing these steps if making more than one roll up. 

  5. For toppings, heat dark chocolate chips with coconut oil in the microwave or on the stovetop until melted. Drizzle chocolate mixture over roll ups. If not paleo, add chopped white chocolate bark pieces and crushed candy cane. Garnish with fresh mint and serve immediately!

Matcha to me is like a fine wine. I only want to drink it during those special occasions when the timing is just right.  Matcha is also not the cheapest thing in the world so you can probably see where I’m going with this but in all reality, I cherish the benefits and the robust flavor that goes along with it.

You see, matcha comes from the same plant as green tea but since it is made from the entire leaf, it packs in a more concentrated amount of antioxidants and beneficial plant compounds. Matcha powder can stand on its own, but why we can take it up a notch by adding cordyceps mushrooms, ashwagandha, ginger, and wheatgrass.

Okay, let’s pause. I’m sure some of you are asking, “What the heck are these ingredients and why are we adding them”?

Cordyceps Mushrooms: Improves energy, endurance, and strength while helping to reduce fatigue.

Ashwagandha: An herb that can reduce anxiety and stress, help fight depression, boost fertility and may even boost brain function.

Ginger: A spice that is beneficial for people with indigestion and related stomach discomfort.

Wheatgrass: Is prepared from the freshly sprouted leaves of the common wheat plant, Triticum aestivum. Benefits include weight loss, decreased inflammation, lower cholesterol and better blood sugar control.

So, wouldn’t that taste like dirt? I thought the same thing until I used Further Food ‘s mindful matcha powder. Matcha can stand on its own, but combining matcha with mint and chocolate really takes these energy balls to a new level. Peppermint extract and cacao nibs really bring out the refreshing tones of matcha while being naturally sweetened with medjool dates.

I love knowing that I can treat myself to these  first thing in the morning for that burst of refreshing energy or have one as an afternoon or pre-workout snack.

Ingredients

  • ¾ cup superfine almond flour

  • ¼ cup coconut flakes

  • ¼ cup cacao nibs or mini dark chocolate chips

  • 8 pitted medjool dates

  • 1 Tbsp coconut oil

  • 1 Tbsp filtered water

  • 2 tsp mindful matcha powder or regular matcha powder

  • ½ tsp organic peppermint extract

  • Sprinkle of pink himalayan salt

Directions

  1. To a food processor or high powered blender, blend medjool dates until the dates form into a ball. Scoop out and set aside.

  2. To the food processor, add the rest of the ingredients except the cacao nibs and blend until a fine meal is achieved - about 20-30 seconds.

  3. Add the dates back in and blend until fully incorporated: not crumbly, not tacky, but more mold-able. If the mixture is too dry, add 1 tsp water in increments. Be sure to taste the dough for desired flavor. Personally, I like to add more peppermint extract to the dough.

  4. Take the mixture out of the processor and transfer to a small bowl. Fold in cacao nibs or chocolate chips.

  5. Scoop out 1 tablespoon amount and form into a ball. Repeat until all dough is formed into balls.

  6. Chill in refrigerator for 10-15 minutes before serving.

  7. Store leftovers in an airtight container for up to a week in the refrigerator or freezer for up to 1 month.

  • Makes 10-12 balls
